Cauliflower is the new potato...at least in our house it is! We LOVE it and I'm always looking for new ways to cook it. I found this recipe on a great recipe/cooking blog woodenspoons.in!
Ingredients1 large head cauliflower, cut into medium-sized florets
3 Tbs. olive oil
2-3 cloves garlic, minced
3 Tbs. balsamic vinegar
1/2 tsp kosher salt
1/2 tsp freshly ground pepper
1/2 c. freshly grated Parmesan cheese
Mix everything above—except the Parmesan- in a large bowl. Let sit for an hour or so.
About 35 minutes before serving, preheat oven to 425 degrees. While the oven is preheating, line a baking sheet with foil. Put ingredients on the lined sheet then bake for 15 minutes. Remove from oven and stir in the cheese and bake for another 10 -15 minutes until fork tender.
