This recipe is heaven on earth, especially if you're a 21 Day Fixer!
21 Day Fix AND Paleo friendly! I've seen a lot of recipes similar to this one with peanut butter, which I love, but since I follow a Paleo diet, PB is a no-no. I use almond butter instead, and I've also used cashew butter, which is also delish in this cake!
1 Scoop (or 1 packet) Vegan Chocolate Shakeology® (or regular if that's what you already have)
1/4tsp Baking powder
Pinch of sea salt
1T Unsweetened cocoa powder
1 Egg white
5T Unsweetened vanilla almond milk
1-2tsp almond butter (or cashew butter)
Spray mug with coconut oil
In a small bowl, combine Shakeology, baking powder, sea salt, and cocoa powder
Add egg white, honey, and almond milk -Stir until combined
Add half of the batter to the bottom of the mug
Drop 1 teaspoon of almond butter in center of batter, then add remaining batter to the mug
Microwave for about 1 minute 30 seconds - note that microwave times will vary!
Remove from microwave and allow to cool in mug for 3-5 minutes
Remove from mug or eat directly from it!
Drizzle more nut butter of choice or top with sprinkle of vanilla shakeology
